Tkemali is a traditional Georgian plum sauce. Its color depends on the variety and type of plum – it can be green, yellow and red. The red sauce is made from red plum and wild thorn, and has a sour and spicy taste.

The green sauce is made from sour, not fully ripe plums or cherry plums (tkemali), and the yellow sauce is made from mirabelle plums. A popular practice is to mix fruits of several varieties and with varying degrees of ripeness. In addition to plum or cherry plum, the sauce is enriched with various herbs and spices (coriander, mint, garlic, tarragon), which emphasize the taste and complement the sauce with their aromas. It is worth emphasizing that there is no drop of vinegar in the sauce. The sauce is ready to eat and can be used both hot and cold. It gives dishes a pleasant, sour note.
